The term "chop suey" was first used in English in 1888. It is thought to be a transcription of the Chinese phrase "tsap seui," which means "miscellaneous leftovers." The original chop suey was a Chinese dish made with leftover meat and vegetables, cooked in a stir-fry.
In the late 19th century, Chinese immigrants brought chop suey to the United States. However, the American version of chop suey soon diverged from the Chinese version. American chop suey typically includes ground meat, macaroni, and tomato sauce. It is also influenced by Italian-American cuisine and New England cooking.
